Rocky Road Tray Bake

Welcome to Week 3 of Summer Sun-day! As you’ve been sew busy (get it?!) making Wine Glass Coasters and Sunglasses Cases I thought you deserved a bit of a break with a nice chilled treat…no, not prosecco – my no-bake Rocky Road Tray Bake!  It’s really easy to make (yes, even with the kids if you can’t make it and hide it!) and takes no time at all to prepare.

You’ll need:

  • 200g milk chocolate
  • 75g butter
  • 4 tablespoons golden syrup
  • 160g plain digestive biscuits broken into small pieces
  • 30g mini marshmallows
  • 100g chopped glace cherries

The technical bit:

  1. Line a loaf tin/square cake tin with cling film (you don’t have to, put it makes it so much easier to lift out your tray bake if you do)
  2. Put the butter, chocolate and golden syrup into a saucepan and gently heat on the hob (lowest heat), stirring continuously until they have melted
  3. Add your digestives, cherries and marshmallows and stir well
  4. Transfer to the loaf tin, gently pressing down and into the corners to fill any gaps – I found using a silicone spatula very helpful for this
  5. Put in the fridge until it has fully set (approximately 3 hours)
  6. Remove your tray bake from the fridge and cut into small squares

There you have it, super easy and stress free! If you like this, you’ll love my Malteser Tray Bake…equally as tasty, although equally as calorific (sorry!)
