Chocolate Orange Muffins {Countdown to Christmas}

christmas muffins

We’re less than a week until the start of December so I’ve decided to bring out the baking big guns…my Christmas version of My World Famous Muffins – the Chocolate Orange Muffin. Oh yes, if you get really excited at the thought of Terry’s Chocolate Oranges being on offer at the supermarket throughout December, and finding another in your Christmas stocking on Christmas morning (assuming you’ve not sickened yourself by eating too many in the lead up to the big day) you’ll love this muffin recipe. I personally make any excuse to bake these for people in the lead up to Christmas; if for no other reason than they make the house smell a-mazing in the process! I love to make a batch for my colleagues at work but they’re also a great little present to give to somebody; all you need is a cardboard muffin box (a lot of supermarkets and Hobbycraft sell these). If you’d like to have a go at making your own, you will need:

  • 200g butter
  • 200g caster sugar
  • 250g self raising flour
  • 50g  cocoa powder
  • 4 medium eggs
  • 3.5 tablespoons milk
  • 0.5 tablespoon orange essence
  • (OPTIONAL FOR HARDCORE CHOCOLATE ORANGE FANS ONLY) 125g of roughly chopped segments of Chocolate Orange Segments (around the size of chocolate chips)

Equipment Needed

  • Mixing Bowl
  • Metal Dessert Spoon (+ 1 additional to help you spoon the mixture into the cases)
  • Tablespoon
  • Scales
  • Measuring jug (or a large mug will be fine!)
  • Whisk
  • Paper Muffin Cases (or silicone for the environmentally conscious!)
  • 12 Hole Muffin Tin
  • Cooling Rack

  1. In a mixing bowl, cream softened butter and sugar in a bowl until the mixture is light and fluffy (to cream the two, use a metal spoon and press and drag the mixture against the side of the bowl…you’ll hear the sugar crunching)
  2. Add the flour to the bowl
  3. In a jug, whisk the milk and eggs together
  4. Add to the mixing bowl and combine gently in a figure of 8 movement until smooth (be careful not to overwork the flour by stirring to vigorously)
  5. Add the orange essence and your chocolate orange pieces (if you’re hardcore) and stir gently to combine
  6. Spoon the mixture into paper cases and bake in the oven (Gas Mark 5/200 degrees Celsius) for 20-25 minutes (when you check your cakes are ready press the top gently…if it springs back, it’s cooked)
  7. Leave to cook on the rack
  8. Try not to eat them all at once!

If you’ve read my World Famous Muffins post (and if not, you should check this out!) you’ll see more combinations you can use – another great one for the Christmas season is White Chocolate and Cranberry – they are also a very popular choice!

Hope you’re enjoying the Countdown to Christmas series – keep checking back throughout November and December for more great ideas of things to bake or make. Don’t forget you can also follow What Corrine Did Next on Facebook, Pinterest, or Instagram
