Deliciously Light Beetroot Chocolate Brownies

Love Brownies but hate the calories? I hear you, I can’t resist them either. I think I’ve found a slightly healthier alternative – Beetroot Brownies. Regular readers will know this isn’t my first foray into vegetable cakes (did you catch my Courgette and Lime Cake last Summer?) and this recipe doesn’t disappoint if you’re looking for a great beetroot recipe! The recipe lends itself to a lighter, fluffier mixture than my usual Brownie mixture and it certainly tastes less fudgy but what it lacks in stodginess, it does not lose in the taste – yummy!

This recipe calls for cooked beetroot – if you have raw beetroot, top, tail and peel your beetroot (maybe wear your rubber gloves for this job, it’s a bit messy), roughly chop, splash over a dash of water, cover and cook in the microwave for 10-12 minutes (I cooked mine in a Pyrex dish with a lid)

To make your own, you’ll need:

  • 400g cooked beetroot
  • 100g butter
  • 200g good quality dark chocolate
  • 250g caster sugar
  • 3 eggs
  • 100g plain flour
  • 25g cocoa powder

You’ll also need:

  • Blender
  • Mixing bowl
  • Metal poon
  • Whisk
  • Sieve
  • 23 cm tray bake tin
  • Baking parchment

Method:

  1. Break your chocolate into small pieces into a blender
  2. Add your butter and cooked beetroot and blitz until smooth
  3. In a mixing bowl, whisk your sugar and eggs until light and foamy
  4. Add your beetroot/chocolate/butter mix to the mixing bowl and fold in, being careful not to lose the air
  5. Sift in your flour and cocoa and fold in gently, again trying not to lose the air
  6. Pour the batter into your lined baking tin
  7. Bake for 25 minutes on Gas Mark 4 – if it’s not ready, you may need to leave it in for a little longer. You’re looking for a slight crust on the top but still a little jiggle when you shake the tin
  8. Leave to cool in the tin for 30 minutes then turn out onto your cooling tray until it has cooled completely
