Malteser and Chocolate Fingers Celebration Cake

This cake has it all: chocolate cake: check! Chocolate buttercream: Check! Maltesers: Check! Chocolate Fingers: Check! Wow Factor: Check in abundance! If you’re looking for the perfect celebration cake, you’ve come to the right place!

This really does make a spectacular centre piece, and you’d be amazed just how simple it is to make. It requires very little skill to make and assemble, and I can guarantee whoever you share it with will be super impressed.

To make your own, you’ll need:

  • 200g self raising flour
  • 2 level teaspoons baking powder
  • 40g cocoa powder
  • 225g caster sugar
  • 375g butter, softened
  • 4 large eggs
  • 200g dark chocolate (at least 70% cocoa solids)
  • 300g icing sugar
  • 1 box of Maltesers
  • 1 box each of milk chocolate and white chocolate Chocolate Fingers

You’ll also need:

  • Mixing bowl
  • Sieve
  • 2 x 20cm sandwich tins
  • Baking parchment
  • Measuring scales
  • Mixing spoon
  • Cooling rack
  • Small saucepan

Method:

  1. Preheat your oven to 180 degrees Celsius/Gas Mark 4
  2. Grease and line the bases of two 20cm sandwich tins
  3. Sift the flour, baking powder and cocoa into your mixing bowl
  4. Add the caster sugar, 225g of butter the eggs and 1tbsp water and beat until evenly mixed
  5. Divide the cake mixture evenly into the two tins  and level the tops
  6. Bake for 25-30 minutes (or until the cakes have shrunk from the sides of the tins and the tops spring back when lightly pressed) – turn out onto the cooling rack and leave to cool
  7. Melt your chocolate – you can do this in two ways. The first is to melt it in the microwave, removing it and stirring it every 15 seconds. The second is to put the chocolate in a bowl and place over a simmering pan of water on the hob and leave it until the chocolate has melted. Whichever way you choose, you should let the chocolate cool on the countertop until it is just warm
  8. Beat together the remaining butter and your icing sugar until very light and fluffy. Add the melted chocolate and beat again
  9. Spread some of the mixture on one cake and put the other on top to sandwich the two together
  10. Decorate the top of your cake with Maltesers (I work from the middle outwards in circles) and round the sides with chocolate fingers
  11. Leave to set before serving

I apologise in advance for how difficult it is to cut – finding a gap between chocolate fingers is fine, it’s the Maltesers that are the issue – stick with it though, it’s totally worth it!
